Which platform keeps the most of a sale?

It depends on the price and shipping. On a $45 item with $8 shipping, Depop's zero selling fee and TikTok Shop's 6% usually keep the most; Poshmark's 20% keeps the least. The table works it out for your numbers.

Why is the price for my target profit different on each platform?

Because each platform takes a different share and some charge fixed fees per order. The column shows the lowest price at which that platform leaves you the profit you entered.
